“I trust you” or “chef ’s choice”. This is the meaning of the Japanese word “omakase”, the concept chosen by Josafat Zalapa for his restaurant located in the heart of the city of Morelia, Mexico.
The idea here is to let yourself be taken on a five-part culinary journey by the chef, immersing yourself in the best ingredients and flavours found in Mexican cuisine. But don’t be fooled if you think this journey only begins once you’re sat at the table.
The experience actually begins at the entrance to this gastronomic oasis, set inside a 19th century mansion which, thanks to the FMA architecture studio, has been revitalised. The corridor and gallery lead guests to an interior courtyard embellished with numerous works of art, the centrepiece being a sculpture featuring dead vegetation that alludes to the passing of time in this building. Passing through this space you reach the two adjacent rooms that are included in this project: the Damiana Room, a kind of backstage with no shortage of cocktails and good music, and then the centrepiece of Josafat Zalapa, the extended bar surrounded by massive walls and 20 chairs, where customers gather around the chef to watch the culinary performance that can be enjoyed from the front row.

The premise of the project was to respect the site’s original architecture, while at the same time creating a timeless space that blends in with all the layers of history that have accumulated over time.
